our BAD BOY chocolate brownie

YUMMY

Makes 18 portions 5 - 8 Minutes 170°C

INGREDIENTS
- 300g Unsalted butter
- 300g Dark Chocolate 70%
- 6 Whole free range eggs - 190g Caster sugar
- 190g Dark brown sugar - 225g Plain "Matthews" flour - 75g Roughly crushed hazelnut (Optional)
CHEEKIE CARAMEL
- 90g Light brown sugar
- 160ml Double cream
- 30g Butter
- 2g Fine sea salt
METHOD
- Pre heat the oven to 170°C - Melt the chocolate and butter together in a bowl over a pan of hot water - Place the eggs and sugar in a bowl and beat - Add the melted butter and chocolate mixture - Fold carefully the flour and hazelnuts, if using - Pour the mixture into a tray and bake at 170°C for 22 minutes - For caramel, place all ingredients into a pan and bring to boil for 3 minutes - Simmer for 1 minute and allow to cool slightly - Check the centre of the brownie with a skewer to make sure it comes out clean
